Tues. 08/09: We’re Open and Cooking Up Your Favorites!

It was so good seeing some of you out at our First Friday on Aug. 5th. It seemed everyone had a great time!

Today we are open for business as usual with all your favorite menu items.

We’re looking forward to seeing all our customers and learning what you’ve been up to over the summer. We had our 5000+ mile road trip, and that was a wonderful adventure. Now we’re ready to get back to the business of cooking some great foods and catching up with our customers.

We’re trying out a new sandwich today:

The Creole Chicken Salad Sandwich!

I was inspired by all the wonderful foods we tried down in Louisiana in the REAL cajun/creole country. We love New Orleans, but let’s face it…it’s become a tourist mecca. So now we travel to where the real soul of the Louisiana area lives; in Arcadiana.

We met wonderful, friendly people; talked with very knowledgeable chefs and ate delicious foods. I had  Creole chicken while I was there and that inspired this sandwich.

I still grill the chicken breasts as I do for my regular chicken salad, but this one gets my newly created spice rub on it before it grills. Then after it’s cooked and cooled, I dice it up with the onions and celery and it gets another hit of spices; giving it just enough heat to let you know you’re eating cajun/creole, without slapping you in the face with too much spice!

Even if you think you don’t like spices, come on in and ask for a sample. You know we love giving samples of our foods, so don’t be shy…just ask!
