What a Thursday @ The Deli Diva!


Some days my culinary vibe just can’t be shut down and today is one of those. I’ve been cooking and baking up a storm and you don’t want to miss any of this!

For starters we have the most delicious Chicken and Rice Soup you’ve ever put a spoon to! The secret is in the homemade, slow cooked broth and vegetables that you saute in extra virgin olive oil prior to adding them to the broth. This brings out all their flavors much more so than just boiling them in the stock. Here’s the veggies in the saute pan getting just the right amount of brown on them .

Next is a shot of the chicken stock coming into its own.

For the very best stock, add your chicken and all the skins and ends that you cut off the onions as well as all the parts you would normally throw out from any of the veggies you add.  And always throw in some bay leaves! (Once it’s cooked down into a fabulous stock, you’ll strain it, keep the chicken and discard all the other items.) THIS is what sets your stock apart and makes your family and guests think you are the Godess of the Kitchen!

Ok, enough soup talk. On to the main course…LASAGNA!  And to go with that lasagna, how about a nice slice of homemade Focaccia Bread with Extra Virgin Olive Oil, Garlic, Oregano, Basil, Rosemary and Thyme!

Now, what would you like for dessert to finish off this great meal? We’ve got Brownie Crumble Topped White Chocolate Macadamia Nut Cookies! OMG!
